If I could only stock one Champagne it would be Bollinger Special Cuvée. Ayala sits under the same roof and gets a fraction of the attention, so I stock that too. I buy large formats because Bollinger age their reserve wines in magnum, which means a big bottle isn't a gimmick with this house. Away from the big names there's Dumenil for when the houses start tasting like each other, Langlois Crémant for people planning a wedding, and Exton Park because I'd put English sparkling up against a good Champagne.
