Chablis 2023, Domaine Jean Dauvissat Pere et Fils
Dauvissat is a name that means something in Chablis. Three years on the cork and it has stopped being sharp and started being interesting. The Domaine's Philosophy All our interventions are guided by our concern to preserve our environment and to respect our terroir. We have inherited an exceptional terroir and we have a duty to pass it on in good health. We strive for our wines to be vibrant, to transpire the terroir from which they come. Our cuvée comes from our oldest vines, planted between 1950 and 1960 on the Chapelle Vaupelteigne plateau. These 60 year old vines have created a deep root system, directly in contact with the limestone rock, which gives the wine a deep minerality. The small yields of the old vines also bring a lot of complexity to this cuvée. I really enjoyed this wine, recommended.
